I hope everyone is enjoying a long weekend off work, but to those who aren’t, I feel you. The only day my work closes is Christmas!
Make sure you stuff your faces with loads of chocolate – or maybe a rocky road treat – and a lovely roast dinner!

Happy easter guys! Whether you celebrate it or not, here’s a tasty recipe you could do with the kids!
It might teach them some patience.
So, I’ve found that on average, a child has eight easter eggs over the holidays (I was never one of those kids) which means there can be alot of leftover chocolate.
This rocky road recipe will help you use up all that leftover chocolate and you can add anything else you like!
My recipe included:
- 400g of chocolate
- 125g of crushed biscuits
- 100g of marshmallow – mini is better, but I just got some big ones and teared them in to four
- 150g mini eggs
- 2 tbsp golden syrup
You can also add:
- Dried fruit
- Chopped oreo biscuits
- Fudge peices
- Chocolate peices
- Chopped chocolate bars
- Peanut butter
So to start, melt 300g of chocolate and mix in the golden syrup. If your going the peanut butter route, maybe melt in 100g of peanut and 200g of chocolate instead.
Now, add in your biscuit, your marshmallow and mini eggs and fold it all together.
Next, line a tray with some baking paper and spread the mixture to cover the bottom. Then, melt the rest of your chocolate and spread it over the top.
Then, put it in the fridge to set for about two hours, take it out and cut it in to pieces! You can serve them as is or dust a little icing sugar on top!
Its such a versatile dish and so easy to make that you could prepare it in ten minutes and have it for desert after dinner.
